No time? No problem! These no-bake, 5 ingredient energy balls are the perfect snack to add to your meal prep Sunday lineup.
I don’t know about you, but I’m a snacker. Snackasaurus rex if you will. “I’m hungry” is probably one of the most common phrases that comes out of my mouth.
At the beginning of 2020 I made a resolution that I would start making healthier food choices. This has proven to be tougher than I thought as I am a sweet and salty loving gal. If I could have it my way, chocolate covered pretzels would be included in the food pyramid as a staple food group.
In addition to making healthier food choices, I also promised myself I would make all aspects of my life more efficient because I am constantly on the go. As a forensic scientist, I need to have snacks I can easily pack in my bag to bring to crime scenes that keep me full for long periods of time. There is nothing worse than a hangry alligator in a vest…hah! Get it?!… Investigator.
So where does one go to identify the perfect snack…. Pinterest of course!
There are about a gillion recipes for no-bake healthy energy balls and here is my take on them.
Follow this easy, 5 ingredient peanut butter energy ball recipe below and you’ll be snacking happy! Best part…no oven necessary! Holla at cha girl!
Ingredient List:
⅔ cup Creamy Peanut Butter
½ cup Semi-sweet Chocolate Chips (I like the mini version)
1 cup Old Fashioned Oats
½ cup ground Flaxseed (I use Bob’s Red Mill Organic Golden Flaxseed Meal)
2 tablespoons Honey (sometimes I add a little extra for good luck)
How to make Energy Balls:
- Get your mix on – Combine all ingredients into a bowl and stir.
- Cover and chill -Place the covered bowl into the refrigerator for 20-30 minutes.
- Grab and go – Once chilled, roll the mixture into bite-sized balls. Store in a ziplock bag or plastic container in the fridge.
