Y’all let me just you about my ALMOST Pinterest fail!
I’d like to think that when I stumble across an idea on Pinterest that I’m pretty successful when it comes down to the execution. This time was not the case!
It was my interns’ birthday and I wanted to do something thoughtful and fall-themed since tis the season! I stumbled across an idea for mini individual apple pies! Not only could I surprise my intern, but I could treat the entire office to a tasty treat!
So I gathered all of my baking utensils, ingredients, and modified my mum’s apple pie recipe in order to create these mini pies.
Here is what I learned from this baking attempt… I’m not great at baking pies ? Not only am I horrible at trying to create a lattice top for the pie, but these pies were scary as all get out to look at pre-bake, I left them in the oven for far too long, and quite honestly, they didn’t look that much prettier post-bake!
Fortunately for me, the stomach doesn’t care about presentation and these single-serve pies turned out to be pretty yummy after all! I’d consider that to be a half Pinterest win!

Mini Apple Pie Ingredients
2 boxes of pre-made pie dough crusts (listen, I’m all about making my life easier)
4-5 Cortland Apples
1 tbsp cinnamon
½ tsp nutmeg
¼ cup white sugar
½ cup brown sugar (I used dark brown sugar)
1 tbsp flour
2 tbsp melted butter (I added a 1 tbsp to pie filling & 1 tbsp to brush on top of pie)
Sanding sugar (optional but totally worth it)
Instructions
- Preheat the oven to 400 degrees
- Peel and dice your apples
- In a large bowl, combine your diced apples with the cinnamon, nutmeg, white sugar, brown sugar, flour, and melted butter.
- Spray a cupcake pan with nonstick cooking spray. Roll out your pie dough crust and punch out 4’ circles. Insert these circles into each cupcake tin. (use a rolling pin the thin out the pie dough crust just a tad…this will help the final product not be so “doughy”)
- Fill each mini pie with apple filling. Either apply another 4’ circle of dough for the top of the pie or form lattices in a criss-cross pattern over each pie. (make sure you cut out little vent holes in the top)
- Brush the remaining melted butter over the top of each pie
- Sprinkle each pie top with sanding sugar (optional)
- Bake in the oven for 20 minutes
- Allow mini apple pies to cool completely before removing from each cupcake tin.
What I would do Differently
When I first envisioned baking mini apple pies, I thought I would bake them in a mini pie pan versus a cupcake tin. However, my favorite places, Micheals and HomeGoods, let a girl down by being out of stock of mini pie pans 🙁 I had to adapt and overcome! Next time I will invest AHEAD OF TIME in a mini pie pan or these individual 5′ aluminum foil disposable pans.
I will also pay more attention to the amount of time I baked them in the oven. I wasn’t seeing that golden brown top I wanted so I kept them in the oven for far too long. MISTAKE!
These mini pies make the perfect dessert option for your next office potluck or Friendsgiving! Hopefully you have better luck than I did.
