I’m not going to lie, I am super jealous of all those stay-at-home women who have the time to make a healthy breakfast and actually sit down to enjoy it. I’m also jealous of those working women who actually make the time in the morning to make themselves breakfast and have the time to sip their coffee and get caught up on the news or email.
THAT’S JUST NOT ME…and it never will be. I’m the girl who hits snooze 80 times, has to convince herself to workout in the morning, and then tears through the house like a tornado to make it to work on time.
I’m also one of those solid three meals a day plus a million snacks kinda gal…I literally wake up starving! If I skipped breakfast I can’t even imagine how horrible of a human being I would be to be around HAH! #hangry
So if I’m constantly running around late and I clearly can’t skip a meal, what does a typical breakfast look like? So glad you asked!
Over the years I have perfected the on-the-go healthy breakfast. I can make the following breakfast ideas listed below in under 2 minutes…that’s pretty good!

Easy, Healthy Breakfast Options:
Homemade Oatmeal
I love oatmeal! Oatmeal is one of those breakfasts that you can customize however you like it which prevents it from getting old and boring.
Oatmeal is an excellent start to the day as it helps with weight loss, lowering blood sugar levels, and can reduce heart disease. It also keeps me super full until at least mid-morning!
This on-the-go breakfast takes me just a minute or two to make. I boil water while I make my coffee and pack my lunch. Then it’s as simple as mixing in ingredients!
Homemade Oatmeal Recipe:
Ingredients:
- ½ cup Rolled Oats
- 1 tsp organic pure maple syrup or honey
- ¼ tsp cinnamon
- Handful of walnuts or sliced almonds
- Handful of fruit (ex. Blueberries, strawberries)
Directions:
- Add boiling water to rolled oats. Let sit for a minute to soften oats.
- Add remaining ingredients
Yummmmm! Enjoy! Yes, it’s that easy!
Microwavable Scrambled Eggs
Yes, I know…this sounds horrific, but hear me out! I was scrolling through Pinterest one day searching for easy breakfast ideas and saw a recipe for 1-minute microwavable scrambled eggs. I’m all about trying new things and mixing up my morning routine so I gave it a shot.
Eggs are a great breakfast option as they are full of protein and will keep you full. Knowing that I could have a healthy, nutritious breakfast in just about 2 minutes…sign me up!
I like to make my scrambled eggs in a Corningware mug because it’s microwave safe, comes with a travel lid, and is perfect for other dishes as well, such as chili or soup. You can easily find these on Amazon, at Target, or Walmart!
Microwavable Scrambled Eggs Recipe:
Ingredients:
- 2 Eggs
- ¼ cup or less of water or milk
- Salt and pepper to taste
Directions:
- Spray your microwave mug or bowl with nonstick cooking spray
- Crack your eggs, add water or milk and salt/pepper
- Whisk ingredients
- Heat in microwave for 45 seconds, stir
- Heat for an additional 15-20 seconds depending on microwave (eggs will expand and look fluffy)
Get creative with your eggs! Add cheese, meat, or salsa to spice up your morning breakfast!
Morning Protein Smoothie
I am a lover of smoothies! They are my go-to after a workout or if I want an afternoon snack. Lately, since I have been working out in the morning, they have been my breakfast too!
Smoothies are fabulous because you can make them however you want! Sky is the limit!
I love our Cuisinart blender because you can blend your smoothie right in a to-go cup which also comes with a lid…could breakfast on the go be any easier?!?
You do not have to add protein to your smoothie, but I like to as I find I do not get enough of it throughout the day. In addition to protein powder, I add a variety of ingredients that range from spinach, kale, almond butter, chia seeds, frozen fruit, coconut water, collagen, and more! No smoothie is ever the same!
Below is what I have been putting in my morning smoothie as of late:
Handful of frozen strawberries
Handful of kale
Alani Nu Confetti Cake protein powder
Vital Proteins Collagen Peptide Powder
Coconut Water
Blend all of this yumminess for a delicious, filling breakfast! Honestly, this smoothie tastes like a treat in the morning!
